RECIPE: Dairy Free Berry N-ice Cream
This delicious ice cream is beyond easy. Keep a few bananas in the freezer so you can whip up this ice cream in a flash. I like to add some vanilla essence for a richer flavour. Try and source a non-alcoholic brand – most health stores carry them. Strawberries, raspberries, blueberries, blackberries and cranberries are rich in polyphenols; a compound found in foods that are purple or red in colour and which protects your body from cell damage. The berries in this recipe add some super nutrients, so you won’t feel like you’ve fallen off the healthy eating wagon. You can use a Vitamix or regular food processer to blend the fruit. What you need
- 2 bananas
- 2 cups mixed berries
- 3 drops vanilla essence
- 3 drops liquid stevia (optional)
- Peel the bananas and freeze overnight.
- Mix the berries, vanilla and stevia together and then process with the peeled bananas.
- If you like a softer ice-cream, add ½ cup of nut milk.
